Of late my pizza has been quite a success. Improvising is the stepping stone 🙂 Here is the proof.

Simple delight with few everyday vegetables – onion, red pepper, olives. For an extra touch, top with mozzarella cheese and fresh basil leaves. Its a great little treat 🙂

This soup is always in my list for quick dinner. Its simple and quick to make.. Yet, you get to eat a healthy meal with veggies and some pasta. This is one of the good way I enjoyed ravioli. The soup keeps the ravioli away from drying out too soon, yet not saggy. I used spinach and ricotta filled ravioli to contrast with the tangy sweet tomato soup. Carrots and green beans for veggies. Dried Oregano for herb to get that Italian flavourful seasoning. Optionally, shredded cheese for topping.

Can a simple salad make you feel contented. New potato with Chorizo, Green beans and Egg Salad is one such. Its very simple dish, quick to make and ever delicious with bag full of flavour.

Creamy soft boiled potatoes and boiled eggs with salty & spicy pan fried spanish chorizo with crunchy beans along with right amount of acidity from sherry vinegar makes this dish really stand out. The right balance of texture and precise level of acidity is what makes this dish from good to wow!!!

It is such a pleasure to enjoy treats made of chocolates. Here is the picture of my cocoa cupcake with cocoa buttercream and white chocolate topping.

For cocoa cupcakes recipe follow my Diablo chocolate cake. It makes 8 large cupcakes.

The soft and light cake with the hint of bitter cocoa along with the light cocoa buttercream with the intense sweetness from icing sugar and topped up white chocolate is such a merry to enjoy 🙂 It reminds me of my all time favourite hummingbird bakery devils chocolate cake.

Banana Muffin

Whenever there is banana with slightly black skin at home, I know its time to make banana muffin. This is one of my best way to enjoy over ripened banana.

Prep time :10 mins
Cook time: 20~25 mins
Total time: 35 mins
Yield: 3 large muffins

Ingredients
all purpose flour80 g (approx. 8 tbsp)
baking powder1 tsp
sugar – 35 g
sunflower oil3 tbsp
egg1 at room temperature
ripe banana1
chopped prunes or raisins3 tbsp
vanilla essence1 tsp

Instructions
Dry mixture:
Mix the flour, baking powder and sugar in a bowl.

Wet mixture:
Peel and break the banana into chunks with a fork in a bowl.
Add the sunflower oil to the bowl.
Beat the egg and add it the bowl.
Add the chopped prunes or raisins to the bowl.
Add the vanilla essence to the bowl.
Mix all the wet ingredients thoroughly.

Add the dry mixture into the wet mixture. Fold it very gently, until the flour is well incorporated.
Brush the muffin case with little oil. Fill each case upto 3/4 level with mixture.
Place the muffin case in the preheated oven. Bake at 180C fan for 20~25 minutes.

Enjoy the delicious warm banana muffin 🙂

Homemade pizza with Spanish Chorizo, Mozzarella

Homemade pizza is a joy forever. Given the fact that its my first attempt, I was deeply happy with success and very satisfied with the taste as well. Its so fresh and tasted delicious with fresh toppings.

Ingredients – For pizza Base
strong white bread flour 400 g
dry yeast 1 tsp
salt 1 tsp
sugar 1 tsp
warm water 225 ml
olive oil 2 tbsp

Ingredients – For Topping
tomato puree 6 tbsp
dried parsely for seasoning
Spanish Chorizo, sliced 100 g
Mozzarella, teared into large chunk pieces 100 g
black olives, pitted and cut into small pieces 10
yellow/orange pepper, sliced into 5cm length 1/2

Instructions
Add the flour, yeast and salt to a large mixing bowl and mix them together.
Dissolve the sugar into warm water.
Make a well in the middle of the bowl and add the sugared warm water into it.
Using electric hand mixer with dough hook attachment start to mix slowly and increase speed gradually. When the mixture is roughly mixed, add the oil and knead them until you get the soft dough.
Turn the dough out to floured surface and shape the dough into a soft round ball.
Leave the dough to proof for an hour in a bowl, lightly coated with oil.
Divide the dough into two equal sized balls. Shape them into a ball and roll into a circle of 1 ~ 2cm thickness with rolling pin. Prick the pizza base with fork.
Spread half the amount of topping on each pizza. Spread the tomato puree on the pizza base, leaving 1~2cm around the base.
Arrange the chorizo slices, followed by Mozzarella slices, olives and peppers.
Drizzle with olive oil and bake at 180C (fan oven) in a preheated oven for 12~15 min or until the base looks golden brown.

Its heavenly, the bread itself is prefectly cooked. The chorizo & Mozzarella topping is delicious, with crunchiness from pepper and intense taste from olives.
