Banana Muffin
Whenever there is banana with slightly black skin at home, I know its time to make banana muffin. This is one of my best way to enjoy over ripened banana.

Cook time: 20~25 mins
Total time: 35 mins
Yield: 3 large muffins
Ingredients
all purpose flour – 80 g (approx. 8 tbsp)
baking powder – 1 tsp
sugar – 35 g
sunflower oil – 3 tbsp
egg – 1 at room temperature
ripe banana – 1
chopped prunes or raisins – 3 tbsp
vanilla essence – 1 tsp
Instructions
Dry mixture:
Mix the flour, baking powder and sugar in a bowl.
Wet mixture:
Peel and break the banana into chunks with a fork in a bowl.
Add the sunflower oil to the bowl.
Beat the egg and add it the bowl.
Add the chopped prunes or raisins to the bowl.
Add the vanilla essence to the bowl.
Mix all the wet ingredients thoroughly.
Add the dry mixture into the wet mixture. Fold it very gently, until the flour is well incorporated.
Brush the muffin case with little oil. Fill each case upto 3/4 level with mixture.
Place the muffin case in the preheated oven. Bake at 180C fan for 20~25 minutes.
